Armoracia rusticana is the latin name for
horseradish and it belongs to the family of
cruciferous plants. It is planted in april, blooms
in May-June and harvested from September.
The plant consists of a fleshy root and eliptical
shaped leaves. It propagates easily and can be
a difficult weed to get rid of in the garden.
During the years 2003-2005 Carlsens
Peberrod, along with a contractfarmer and
the Danish Institute of Agricultural Sciences,
participated actively in qualitytests. The
testresults can be found on the internet.
Horseradish contains twice as much
C-vitamin than lemon, and is rich on
minerals, as well as etheric oils. These
are released during grating and shredding,
which is why we have cried for you for
more than half a century.
