A tasty flower

  The capersbush grows primarily around the
Mediterranean. The bush has large whitepinkish
flowers, that bloom in July-August. It is the pickled
flower buds that are used for the spice capers.
Capers has a sourish aroma, which is used for tartar
sauces, ravigotte, dishes with fish, pancakes, and
especially with Wiener schnitzel.
In casserole capers is normally used with red wine.
Capers are classified by size: NonParille (small),
Surfines (medium) and Cappuchines (large).
The finest taste is found in the small capers,
which are also the most expensive.
